I've mastered a quarter of this masterpiece. I picked up the skins and took them to the cashier to have a look. The skin is soft and slimy. In a shawarma. Here you are eating shavukha, and a chicken skin is sliding on your teeth. Half of the meat component is a soft skin. I also took this skin to show the guy who cooked the shavuha, to which they told me that it should be like this, it's a stewed chicken.
