Samarkand tortillas are always fresh and delicious. Traditionally round and hot as the sun, with lush edges, a soft border and a crisply baked patterned core with notches sprinkled with sesame seeds. I learned from local sellers that tortillas should not be cut with a knife or put "face down", showing disrespect for the sacred product, sacred to Uzbeks.
