Spago Istanbul: How a Special Birthday Celebration Turned Into a Disappointing Experience we made a reservation at Spago Istanbul to celebrate a very special birthday. When making the reservation, we specifically informed the restaurant that this would be a birthday dinner. We were told that a small dessert with a candle would be served during the evening as a thoughtful gesture to mark the occasion. Unfortunately, what should have been a memorable celebration became one of the most disappointing dining experiences we have ever had. The problems started the moment we arrived. Despite having a reservation, our table was not ready at the scheduled time. We were simply asked to wait. What was particularly surprising was that no effort was made to accommodate us at the bar or another available seating area while we waited. Instead, we stood in the middle of the restaurant waiting for our table to become available. For a restaurant operating at this level, especially one associated with Wolfgang Puck and located in the prestigious St. Regis Istanbul, this was an unexpected and disappointing start. Not wanting to ruin the evening, we remained patient and understanding. Once seated, we ordered our dinner and hoped the rest of the experience would improve. Unfortunately, it only got worse. After some time, we politely reminded our server about the birthday dessert that had been promised during the reservation process. Thirty minutes passed. Nothing arrived. We reminded the server again. Another thirty minutes passed. Still nothing. We then asked a third, fourth, and fifth time. Eventually, we had to approach other members of the service staff because our requests were being completely ignored. No one provided an explanation. No one offered an apology. No one appeared interested in resolving the issue. At that point, we approached the hostess at the entrance and explained that we had repeatedly requested assistance but had received no response. She apologized and assured us that someone would immediately take care of the matter. Again, nothing happened. As the evening continued, we remained at the table, even ordering additional cocktails simply because we did not want to sit there doing nothing while waiting. Meanwhile, the staff continued serving other tables without any apparent urgency regarding our situation. By the time it was approaching midnight, I personally asked to speak with the restaurant manager, Mr. Deniz. I calmly explained everything that had happened and how disappointed we were with the level of service. He listened and assured us that he would personally take care of the issue. Once again, nothing changed. After yet another long wait, I found myself leaving the table for the seventh time to ask for assistance. At this point, I explained that what should have been a special birthday celebration had been completely overshadowed by the restaurant’s indifference and lack of service. Mr. Deniz then explained that the pastry station in the kitchen had experienced operational issues and that this was the reason for the delay. Frankly, we found this explanation difficult to believe. Throughout the evening, we had observed birthday celebrations taking place at other tables. We had also seen guests who arrived well after us receiving attentive service and having their requests fulfilled without issue. Naturally, this raised uncomfortable questions. What became increasingly noticeable was the stark difference in the level of attention given to different tables. Certain guests appeared to receive immediate, highly attentive service, while others were effectively ignored. The contrast was impossible not to notice. Whether intentional or not, the impression created was that service priorities were being determined by perceived spending potential and expected gratuities rather than by professionalism or hospitality. For a restaurant carrying the reputation of Spago, this was deeply disappointing. Eventually, we decided that enough was enough and requested the check. We informed Mr. Deniz directly that we wished to leave and that we were extremely dissatisfied with our experience. Amazingly, even receiving the bill became another exercise in waiting. While staff members appeared highly attentive elsewhere in the restaurant, we once again had to repeatedly remind them that we were still waiting. Then came the final insult. After hours of requests, reminders, apologies, and promises, the birthday dessert with the candle finally arrived—together with the bill. Not during dinner. Not during the celebration. Not at any meaningful moment of the evening. It arrived only after we had decided to leave. At that point, what was intended to be a thoughtful birthday gesture felt less like hospitality and more like an afterthought. As we departed, we calmly and respectfully explained that the restaurant had completely failed to deliver the level of service expected from a venue of its reputation and price point. More importantly, it had turned an important personal celebration into a frustrating and disappointing experience. What makes this particularly unfortunate is that Spago Istanbul was once known for exceptional hospitality and service standards. Based on our experience, those standards appear to have deteriorated significantly. A beautiful view and a prestigious name can create expectations, but they cannot compensate for indifference, poor communication, and repeated service failures. Sadly, our experience at Spago Istanbul was not defined by the food, the atmosphere, or the celebration we had planned. It was defined by waiting, being ignored, and leaving disappointed. Needless to say, we will not be returning.
